Garlic Lemon Couscous

I like couscous. So does my family. It’s very toddler friendly! Couscous is made from semolina flour just like pasta. For any basic couscous recipe, just remember that it is a 1:1 ratio of couscous to boiling water so it’s easy to get creative! Here is a simple way of preparing couscous that my toddler loves. It serves two adults and one toddler as a side dish with some left over. I’d make more and add protein to serve as a main dish.

3/4 cup couscous
3/4 cup boiling water
1 1/2 TBS butter
2 garlic gloves, chopped
1 TBS lemon juice

Pour your couscous into a heat safe bowl. Cut up 1 TBS of the butter and put on top of the dry couscous. In  a small pan heat 1/2 TBS butter and saute the garlic, then top the couscous.


Pour in 3/4 cup boiling water and 1 TBS of lemon juice, give a quick stir then cover tightly with plastic wrap.


Let the couscous sit for 5-10 minutes. I use this time to finish up the rest of the meal. Take off the plastic wrap and fluff with a spoon or fork and serve.

It’s just that simple! You can also add in slivered almonds for a bit of crunch.
